Jochen Gaues

Jochen Gaues (* 1966 in Sande , Friesland district ) is a German baker who is known as a supplier of upscale gastronomy and is dubbed by the media as a "celebrity baker".

Life

Jochen Gaues is the son of Jürgen Gaues, a chemist at the Max Planck Institute for Marine Biology in Wilhelmshaven , and his wife Ruthgard, a medical-technical assistant . His uncle worked as a master baker in Wolfsburg . From childhood he was enthusiastic about baking. After the ninth grade, he left school and completed an apprenticeship as a baker.

He is in his second marriage to his former bakery manager, the master baker Elisabeth, called Betty, née Krenz, and has six children.

As a young master baker, he took over a long-established business in 1989 and constantly expanded its quantity and quality. After opening several branches, he employed up to a hundred people. He won so many awards at competitions that in the mid-1990s he was named “Germany's best baker”. Gaues experienced a first setback in 2002 when his company had to file for bankruptcy and his first marriage failed. His friend, the Berlin master chef Christian Lohse, recommended that he specialize in gastronomic bread. The bakery has been owned by his current second wife since 2004, Gaues himself is an employee.

He bakes bread the traditional way - without pre-made dough mixes and artificial additives. The dough is mainly processed by hand; only weighing and kneading machines are used on machines . Gaues is increasingly supplying upscale German gastronomy, including four of the nine German three-star restaurants. In 2010, around seventy of the hundred chefs with at least one Michelin star in Germany were his customers. In 2014, after a partial sale, two branches were operated in Hanover, one in Hamburg and the main business with production in Lachendorf . As of 2016, there are six branches in Lower Saxony and eight branches in Hamburg.

Gaues gained nationwide attention for the 2006 World Cup when he supplied the German national team with his baked goods. In 2010, Norddeutsche Rundfunk shot the three-part report Der Bäcker about Gaues . The author of the above-mentioned NDR film and his brother appeared as acquirers or operators of sales outlets of the Broterbe Gaues bakery . Gaues is an eccentric and sees himself as a perfectionist when it comes to the quality of his baked goods: “Few items, but they are perfect.” Nevertheless, there were problems in his company. After 22 official inspections of his bakery in just ten months in 2010/11 and a temporary, hourly closure of his bakery in Hanover due to hygiene deficiencies, his wife Elisabeth as the owner of the bakery was sentenced to a fine by the Hanover District Court. Annoyed by the controls by the authorities of the city of Hanover, Gaues decided to relocate outside the area of ​​responsibility of the city of Hanover. The Gaues bakery also employed a hygiene advisor who took care of the hygiene measures during the construction of a new production facility in Lachendorf near Celle .

The bakery company Gaues, run by the second wife, also got into economic difficulties, on February 14, 2013 the district court of Celle appointed a provisional insolvency administrator who continues to operate the business in which Jochen Gaues is still employed as a baker, with around 50 employees.

Since September 15, 2014 Jochen Gaues has been involved in "Bäcker Gaues GmbH". The bakery in Lachendorf near Celle was completely renovated as the basis for a structured new beginning. In addition to the sale in the shop in Lachendorf, the old customer contacts to various restaurateurs were gradually reactivated. Since the beginning of March 2015, the 3 Hamburg branches of “Broterbe Gaues” have been owned by “Bäcker Gaues GmbH”. This was followed by new openings in Hanover-Kirchrode in April and in Hamburg-Blankenese in May 2015. Further branches in Braunschweig, Wolfsburg and Hamburg were planned at the time.

Jochen Gaues himself wants to concentrate exclusively on the production of baked goods.

In August 2017, as part of the “Europe's best” event, Jochen Gaues and his wife Elisabeth were invited to the MS Europa, where he presented his bread to chefs and winemakers. In September 2017 he was invited to the “Best-of-the-Best-Awards” of the best from gastronomy, trade and production in Düsseldorf and nominated in the category “Company 2017”. However, he only achieved tenth and last place in the subsequent election.

At the end of 2017, Jochen Gaues was a guest in the cooking show DAS! Kochstudio - New Year's Eve menu on the NDR.
