The Cadillac wine-growing region is located in the south of the large wine-growing region of Entre-Deux-Mers , a part of Bordeaux , and produces exclusively sweet white wines . The appellation covers approx. 218 hectares and is located in the municipalities of Bauch , Béguey , Cadillac (this is the eponymous municipality), Capian , Cardan , Donzac , Gabarnac , Haux , Langoiran , Laroque , Lestiac-sur-Garonne , Le Tourne , Monprimblanc , Omet , Paillet , Rions , Saint-Germain-de-Grave , Saint-Maixant , Semens , Tabanac , Verdelais and Villenave-de-Rions . The area with loamy limestone soil is enclosed by the large appellation Premières Côtes de Bordeaux and lies on the orographic right bank of the Garonne . Cadillac is across from the well-known growing areas of Sauternes and Barsac . Since August 10, 1973, the area has enjoyed the status of an Appellation d'Origine Contrôlée (AOC).

The terms of the appellation apply exclusively to noble sweet white wines (see Botrytis cinerea ) made from the grape varieties Sémillon (average proportion approx. 88%), Sauvignon Blanc (approx. 10%) and Muscadelle . The regulation requires that the must contains at least 221 g of sugar per liter (see also the article must weight ). After fermentation, the minimum alcohol content in the wine must be 12.5 percent by volume. The harvest restriction is 40 hectoliters / hectare. From the approximately 218 hectares of vineyards, an average of around 6500 hectoliters of wine are obtained.

The wines, along with those from Sainte-Croix-du-Mont and Loupiac, are considered to be the best sweet wines in the Entre-Deux-Mers area. In terms of quality, they do not come close to the wines of the Sauternes, but they are an inexpensive alternative.

The wines can be stored for around 7 to 15 years and should be enjoyed at a drinking temperature of 6 to 8 ° C.
