In addition, Hoet was the curator of numerous international exhibitions for contemporary art, including Chambres d'amis in Ghent. For a certain time, this exhibition concept removed the boundary between art and everyday life. He became known in Germany as the artistic director of Documenta IX (1992) in Kassel . From 2003 to 2008 he headed the MARTa Herford , a museum for contemporary art and design in Herford . The first exhibition was already scandalous because the district authority said that the works of the Norwegian artist Bjarne Melgaard on display were harmful to young people. He then worked as the curator of the colossal project in the Osnabrück region .

The focus of the last exhibition that Jan Hoet was able to conceive before his death is the sea and its role as a source of inspiration in art history. After Hoet's death, his co-curator Phillip Van den Bossche completed the exhibition planning. Under the title “The Sea - Salut d'honneur Jan Hoet”, the presentation was on view from October 23, 2014 to April 19, 2015 at various locations in Ostend . The main location was the art museum aan zee (Mu.ZEE).
