In 1972 he was discovered by a talent scout and starred in 20 episodes of the popular television show Hee Haw , which combined country music and skits. By the time the series was discontinued in 1992, Sartain had over 150 appearances on the show. He was also part of The Sonny and Cher Comedy Hour , a TV show with Sonny and Cher, from 1976 to 1977 . Following his portrayal of rock legend The Big Bopper in the 1978 biopic The Buddy Holly Story , he increasingly came to supporting roles in Hollywood films.

The heavyweight actor was often seen in comedic roles, and sometimes he also played redneck characters or sheriffs. Sartain's best-known roles include the corrupt sheriff of a southern Mississippi village Burning - The Root of Hate (1988) alongside Gene Hackman and William Dafoe, and the sedate husband of Kathy Bates ' main character in the tragic comedy Green Tomatoes (1991). He starred alongside comedian Jim Varney in three films in the Ernest comedy series and in the short-lived CBS series Hey Vern, It's Ernest! from 1988. He also starred in the Walker series pilot , Texas Ranger , but did not appear on the series. Sartain last appeared in Elizabethtown in 2005 , directed by Cameron Crowe . After finding this film to be the perfect end to his career, he subsequently retired from acting.
