Giovanni Borsotti contested his first FIS races in November 2005. In January 2008 he was among the top three for the first time, and since then he has regularly achieved top positions. He drew international attention for the first time when he won the giant slalom at the European Youth Olympic Festival 2007 in Jaca . In the same year he was Italian youth champion in slalom. Another success at junior level was winning the bronze medal in combination at the 2009 Junior World Championships in Garmisch-Partenkirchen . Borsotti had already contested a few races in the European Cup in December 2007 , but has only been a regular starter in this series since January 2009. He won his first European Cup points on February 5, 2009 with 13th place in the giant slalom in Soldeu , which remained his best result for a long time. It was only at the beginning of the 2010/11 season that he could improve when he surprisingly won the first giant slalom in Trysil , Norway , and was third in the second. In the further course of the season, in addition to several top 10 placings, there was also a victory and two second places, making him third in the overall European Cup and second in the giant slalom and super combined classification.

In the World Cup , Borsotti started for the first time on February 28, 2009 in the giant slalom of Kranjska Gora . In his fifth World Cup race, the giant slalom on the Gran Risa in Alta Badia on December 19, 2010, he won his first World Cup points with 22nd place. His best World Cup result in the 2010/11 season was 15th in the giant slalom in Hinterstoder on February 6th. Twelve days later he finished 28th in the giant slalom at the 2011 World Championships in Garmisch-Partenkirchen . At the end of the season he was Italian champion 2011 in the Super-G. On January 7, 2012, Borsotti achieved his best World Cup result to date with eleventh place in the giant slalom at Chuenisbärgli in Adelboden . In two other giant slaloms in the 2011/12 season, he was among the fastest 15. The following 2012/2013 season came to an early end for Borsotti: On December 6, 2012, he pulled a cruciate ligament and meniscus tear in his right knee during giant slalom training in Sestriere and a collateral ligament injury in his left knee.

In 2019 he took part in the East Timorese Alpine Ski Championship .
