Most of Gaillard's works are created outdoors, in special places, which is why he is often referred to as a land or field artist . However, Gaillard does not want to be seen as a romanticist representative of this genre, since his work is not about the beauty of landscapes, buildings, etc. Among other things, he deals with the “relationship between architecture and nature as well as the unequal appreciation of historical and modern buildings.” The latter is particularly evident in his Parc aux ruines project . His idea is to build sculptures and the like out of the rubble of demolished buildings in different places around the world. His La grande allée du Château de Oiron, for example, consists of the remains of a residential tower in Issy-les-Moulineaux and the obelisk Cenotaph to 12 Riverford Road, Pollokshaw, Glasgow 2008, made of parts of former Glasgow building complexes. He also photographed these for his series Working in a State of Emergency . Above all, dealing with architectural heritage, as in the case of Glasgow with the failed social housing projects of the 1960s and 1970s, as well as the utopian ideals associated with them at the time, seem to have been important to him in these projects. Gaillard is also fascinated by the demolition of buildings and the modernist architecture of the post-war period. Gaillard is often attested to having an "archaeological view [...] of nature and architecture", which manifests itself in his photo series Geographical Analogies (2006 to 2010) and Fields of Rest .

Gaillard is close friends with the French musician Koudlam , with whom he has already given performances and for whose albums he designed the covers .
