Franz Keller (winemaker)

Franz Anton Keller (born April 4, 1927 in Freiburg im Breisgau ; † March 28, 2007 in Oberbergen ) was a German winemaker , wine merchant, restaurateur and hotelier .

Life

Keller grew up in a dynasty of winegrowers and restaurants that dates back to the Thirty Years' War . His father Franz Anton Keller (1860–1929) had spent professional years in France, among other places. At the end of the 19th century he acquired the Schwarzer Adler inn in Oberbergen, which remained a simple inn for a long time. Franz Keller's mother Mathilde ran the kitchen at the Schwarzer Adler from 1924 .

In 1945, while retreating through East Prussia , the then Oberfähnrich Keller discovered his passion for wine from Bordeaux . He was housed in an estate, with a few bottles of Bordeaux from the landlady's cellar to eat, including a Château Lafite 1928.

After an apprenticeship as a butcher, which he had already started during the war, he founded what would soon be the largest Bordeaux warehouse in Germany, set into a large vaulted cellar in the Kaiserstuhl . The Baden rural youth then demonstrated against him for importing French wine.

In 1969 his restaurant Franz Keller Schwarzer Adler was awarded a Michelin star under the management of his wife Irma (née Konstanzer) . In the early 1970s, the second star was added under his son Franz Keller Junior . Karl-Josef Fuchs and Siegfried Stier , among others, learned in the restaurant . In the mid-1970s Christian Begyn became head chef, and two stars were also awarded under him. The restaurant has had at least one Michelin star without interruption since 1969.

Keller wrote under the pseudonym Fridolin Schlemmer as a columnist for many years in the Badische Zeitung . The "Rebel vom Kaiserstuhl", especially in the 1970s, railed against the wrong variety policy ("variety variety instead of functionaries' simplicity"), excessively high yields, excessive regulations and against the sweetening of wine.

The two sons also work in the catering trade: Franz Keller Junior (* 1950) runs the “Adlerwirtschaft” in Eltville-Hattenheim. Fritz Keller (* 1957) took over the winery , wine trade, both restaurants and the hotel in 1990 . The "Franz Keller Schwarzer Adler" restaurant was awarded a Michelin star under chef Anibal Strubinger (after 2017 Christian Baur took over ) until 2019.

Paul Bocuse and Vincent Klink belonged to his circle of friends . Famous guests of the "Franz Keller Schwarzer Adler" restaurant were Walter Scheel , Wolfgang and Thomas Schäuble and Sepp Herberger . Fritz Walter is the godfather of his son Fritz.
