Still playing as a striker at FC Edt, Wimmer was initially a midfielder at the academy and was eventually converted into a defender. With the football academy he last played in the U-19 youth league in 2009/10. From 2010 he belonged to the LASK Juniors, with whom he won the championship in the Middle Regional League in 2010/11. In February 2011 he signed a professional contract and made his debut in the First League on July 29, 2011 , the second highest division in Austria. As a result, he established himself as a regular in the first team. There he was used as a central defender and as a left full-back.

After the 2011/12 season, he moved from LASK, who was relegated at the time without a license, to the German relegated team from the Bundesliga 1. FC Köln . However, the LASK received training allowance of 200,000 euros. On April 21, 2014 he was promoted to the Bundesliga with 1. FC Köln .

For the 2015/16 season Wimmer moved to the English first division club Tottenham Hotspur .

In August 2017, Wimmer joined Tottenham's league rivals Stoke City . For the transfer, Stoke transferred £ 18 million to the Londoners. Wimmer signed a five-year contract with the Potters . In the first division relegation from Stoke he played only a minor role, during the season he was last used in January 2018.

For the 2018/19 season , Wimmer joined Bundesliga club Hannover 96 on loan , and the club also had a purchase option. Wimmer made 22 Bundesliga appearances under the head coaches André Breitenreiter and Thomas Doll and was relegated to the 2nd Bundesliga with the club . He left Hannover 96 at the end of the season with the end of his contract.

Wimmer did not return to Stoke City to prepare for the summer, but kept himself fit in the training camp of 1. FC Köln. In August 2019 he moved to Belgium on loan to Royal Excel Mouscron . For Mouscron, he made 17 appearances in the Pro League until the end of the season . After the loan ended, he returned to Stoke.
