Périllat had its greatest success during the 1960s. During the 1960 Winter Olympics in Squaw Valley , Périllat became world champion in the non-Olympic Alpine Combined . In the downhill he won an Olympic bronze medal.

He was able to build on these achievements two years later at the Alpine World Ski Championships when he was runner- up in the slalom behind his compatriot Charles Bozon . At the Alpine World Ski Championships in Portillo in 1966 , Périllat won his second world title in giant slalom and came second in slalom.

At the beginning of 1967, Périllat won two slaloms in the newly introduced World Cup - the first in Megève and the second in the 3-Tre races in Madonna di Campiglio , where he also won the giant slalom and combined competitions that were not part of the World Cup. Finally he won his second Olympic medal at the 1968 Winter Olympics in Grenoble with the silver medal in the downhill. At the national level, he won eight French championship titles from 1962 to 1967 . Périllat ended his active career after the 1968/69 season.

In 1961 he was voted France's Sportsman of the Year (“ Champion des champions ”) by the sports newspaper L'Équipe .
