Winsberg grew up as the son of a couple of painters in Eygalières in southern France. At 12 he began to learn guitar, growing up with members of the " Gipsy Kings " (the Los Reyes family in Arles and Tarascon ). He studied at the Conservatory of Cavaillon , where he soon turned to jazz as an autodidact in addition to classical guitar (and gypsy music) . In 1979 he moved to Paris and attended the music school in Sèvres . In 1980 he played on the Los Reyes album "Les fêtes des Saintes-Maries de la mer". In 1983 he won first prize in the “ Concours National de Jazz de La Défense ” and became a teacher at the Paris jazz school CIM. There he met the pianist Jean-Pierre Como in 1984 , with whom he founded the successful jazz rock group "Sixun" in the same year, with Abdou M'Boup (percussion), the drummer Paco Séry , the saxophonist Alain Debiossat and the bassist Michel Alibo . Their first album "Nuits blanches" was released in 1985. In 1987 he played on the album "New York" by trumpeter Éric Le Lann . In the same year he began to work with his own trio, with which he recorded gypsy music in addition to jazz ("Apassionata" 1988).

In 1990 his second album was released under his own name "Camino". In the 1990s he also created music for dance ensembles and recorded with the guitarist Sylvain Luc ("Petits déja ..") and with Jean-Pierre Como. In 1994 he stayed for half a year with the Sixun group in New York City , where they a. a. worked with Joe Zawinul . The result of this stay in New York was the album "Lunatic Taxi" by Sixun (1995). This was followed by a tour through Asia and Europe. In 1997 his solo album “La Danse du vent” was released, followed by a France and Africa tour. The album already showed strong flamenco influences as a result of Winsberg's study of this music. In the same year he started working with the Danish Doky brothers (pianist Niels Lan Doky and bassist Chris Minh Doky ).

In the same year he went on a Scandinavian tour with Gino Vannelli and Randy Brecker . In 1999 he toured Africa, toured with the quintet of accordionist Marc Berthoumieux and played on the debut album of drummer Stéphane Huchard . In 2000 he played on albums by Claude Nougaro and Charles Aznavour . In 2001 he founded the trio “Douce France” with Stéphane Huchard and Christophe Wallemme , with whom he interprets French chansons (album “Douce France” 2007). In the same year he accompanied Dee Dee Bridgewater ("This is new" 2002, "J´ai deux amours" 2005) and released the first album of his project "Jaleo", which was supposed to combine Andalusian flamenco music, music of the Camargue and Indian music .
