He received his training at the seminary in Aosta , received on 5 April 1930, the priestly ordination at the Cathedral of Aosta and was then placed in the care of souls, since 1931 at the Cathedral of Aosta. During this time he also became director of the library of the seminary; This historical book collection had already been the subject of its first scientific study in 1930. In the fall of 1933 he went to Rome, where he spent the rest of his life. He studied Christian archeology at the Pontificio Istituto di Archeologia Cristiana , where he received his doctorate in 1936, and palaeography and diplomatics at the Scuola Vaticana di Paleografia, Diplomatica e Archivistica , from which he graduated in 1935.

From 1936 he worked in the historical department of the Congregation for Rites , where he was responsible for historical canonization processes. In 1959 he became general relator of the historical department, in 1965 undersecretary for the beatification and canonization processes, since 1969 for the congregation for the beatification and canonization processes . Frutaz dealt with church-historical, Christian-archaeological, liturgical history and hagiographic topics. For example, he described the history of the transfer of relics from the beginning in the fourth century, when the bones of the Antiochene martyr bishop Babylas were brought to other places of worship at the imperial initiative, and the function of relics in the consecration of altars .

In 1956, on behalf of the Congregation for Rites, he carried out an investigation into the planned canonization of the priests executed as Christian martyrs during the French Revolution , among them the most famous Andreas Ignaz Joseph Gosseau from Valenciennes (1743–1794), and published it in Latin. Frutaz wrote, among other things, the report of the Congregation for Rites of 1966 with regard to the recognition of the traditionally existing liturgical cult of Abbess Adelheid von Vilich and the report on the cult of Saint Berthold von Garsten .

The three-volume work with 267 maps of the city map is a standard work for the building history of Rome. In the 21st century , the revision of the work of Amato Pietro Frutaz began under the name Progetto Frutaz / The Frutaz Project, which is supported by the Rome Global Gateway of the University of Notre Dame , the Biblioteca Apostolica Vaticana and the Biblioteca Nazionale Centrale .
