Cabardès (AOC)
The area and the wine-growing region of Cabardès took its name from the Counts Cabaret, who defended Lastours against Simon IV. De Montfort . The appellation since February 12, 1999 has exclusively for the red wine on the status of a Appellation d'Origine Contrôlée (AOC shortly).
Geographical expansion
The Cabardès wine-growing region is located north of Carcassonne in the immediate west of the Minervois appellation in the Languedoc wine-growing region . The vineyards cover around 592 hectares of vineyards in the 14 municipalities of Aragon , Conques-sur-Orbiel , Fournes-Cabardès , Fraisse-Cabardès , Les Ilhes , Lastours , Montolieu , Moussoulens , Ventenac-Cabardès , Villanière , Villardonnel , Villedubert , Villegailhenc and Villemoustaussou in the Aude department . The maximum extension of the vineyards is 650 hectares. In the east the 15 km long area is bounded by the valley of the Orbiel , in the west by the valley of the Dure .
location
The vineyards are at an average height of about 220 meters above sea level. d. M. on the gentle slopes of the foothills of the Montagne Noire . The highest vineyards are 320 meters above sea level. d. By a southern orientation of the slopes, the vineyards are protected against the cold north winds. However , the area is not protected against the Cers blowing from the north-west , as the air masses enter the area via the corridor of the Canal du Midi . As a result, the area is climatically the transition from a Mediterranean climate to a temperate climate. Summer is less dry than in the eastern part of the Aude department. The dry season is limited to the period between July 15th and August 10th. This also affects the choice of grape varieties.
Grape varieties
In general, the yields are limited to 50 hectoliters / hectare. In certain years , the yield restriction can be raised to 66 hectoliters / hectare.
The red wines made from the grape varieties Grenache , Syrah , Cabernet Franc , Cabernet Sauvignon and Merlot . The share of Grenache plus Syrah must be at least 40 percent. The same applies to the sum of Cabernet Franc, Cabernet Sauvignon and Merlot. In addition, Cinsault , Malbec and Fer Servadou may be used as secondary varieties . The use of Carignan and Aubun has been prohibited since 2000 .

- The planting density is at least 4000 vines per hectare.
- The natural alcohol content of the wine must be at least 11.5 percent by volume.
