Est! Est !! Est !!! di Montefiascone is an Italian white or sparkling wine ( Spumante ) from the province of Viterbo ( Lazio region ), which has had a "controlled designation of origin " ( Denominazione di origine controllata - DOC) since 1966 , which was last updated on March 7, 2014.

It is (here) !!! ”According to tradition, in 1111 a German prelate named Johannes Fugger sent a servant on his way to Rome and instructed him to write the word“ est ”on the door of all inns with good wine . The servant in Montefiascone tasted the wine so good that he wrote "est" three times. Fugger, whose tombstone is still shown in the church of San Flaviano in Montefiascone, drank himself to death from the wine: Est est est pr (opter) nim (ium) est hic Jo (hannes) de Fu (kris) do (minus) meus mortuus est .

In any case, for a few centuries a barrel of wine was poured on the grave every year.

Cultivation

It is grown in the municipalities of Montefiascone , Bolsena , San Lorenzo Nuovo , Grotte di Castro , Gradoli , Capodimonte and Marta . The wine-growing area is located near Lake Bolsena .

In 2017, 21,570 hectoliters of DOC wine were produced from 331 hectares of vineyards.
