The roller blind is a roll, closed on all sides, made of thin, pre-baked flatbread with a varied filling, which is briefly baked very hot. Roller blinds are usually freshly prepared and offered as fast food in various flavors such as “Arabic”, “Iranian” or “Turkish” .

There are numerous variants, including vegetarian and vegan roller blinds, in which falafel and cheese ( feta or gouda ) are added to the filling instead of meat or animal products are completely dispensed with.

Origin, characteristics and distribution

The Bremen- based restaurateur Hossain Saravi, of Iranian origin, who opened a kebab shop on Sielwall in Bremen's Steintorviertel in 1981 and has been running it ever since, is said to have invented the roller blind in 1982. The creamy sauces created by Saravi, whose composition he guards, but which have nevertheless found many imitators, are particularly decisive for taste. In addition, the flavors of the filling, including the sauce (s) in the flat cake, which is closed on all sides, are intensified during short baking at high heat and mix together, which results in the special “special taste” of roller blinds with the crispy dough shell. In the meantime, roller blinds have become a popular snack and have spread not only in Bremen and the (north) Lower Saxony area, but are also said to be found in other German regions.

Roller blinds are on offer in street sales and in mostly simple snack bars and fast-food restaurants , although they are said to have "displaced pizza and kebab from first place in the Bremen fast-food scene ".

Especially in kebab snacks (that is present anyway) offered there for blinds often kebab meat and usual kebab sauces like cocktail sauce , garlic sauce or tzatziki used. Sometimes filled rolls made of thinly rolled out Yufka dough are also referred to as "rollo"; However, this is actually Dürüm or Dürüm Döner or Yufka Döner from Turkish cuisine .
