The list of cheeses from Switzerland represents a selection. There is talk of a total of 450 types of cheese from Switzerland . In 2014 185,331 tons of cheese were produced.
species
A distinction is made between:
- Cream cheese: cottage cheese, quark, mozzarella, formaggini, mascarpone, feta, cream cheese specialties.
- Soft cheese with mold maturation: Camembert Suisse, Brie Suisse; without mold ripening: Münster, Vacherin Mont d´Or.
- Semi-hard cheese: Appenzeller, Tilsiter, raclette.
- Hard cheese: Emmentaler, Gruyère.
- Extra hard cheese: Sbrinz, Parmino.
The fat content is divided into:
- Skimmed cheese: less than 15% fat i. Tr.
- Quarter fat cheese: at least 15% fat i. Tr.
- Semi-fat cheese: at least 25% fat i. Tr.
- Full fat cheese: at least 45% fat i. Tr.
- Cream cheese: at least 55% fat i. Tr.
- Double cream cheese: at least 65% fat i. Tr.
