Sant'Antimo DOC

White and red wines from local winemakers are marketed under the name Sant'Antimo DOC (named after the Abbey Abbey of Sant'Antimo ) , which come with a few exclusions from the municipality of Montalcino in the province of Siena ( Tuscany region ). The designation was protected in 1996 as a "controlled designation of origin " ( DOC ). The regulation was last updated on March 7, 2014.

The wine is offered in different types:

  • Sant'Antimo Bianco : White wine - all white grape varieties that are approved for cultivation in the Tuscany region may be used
  • Sant'Antimo Rosso : Red wine - all red grape varieties that are approved for cultivation in the Tuscany region may be used
  • Sant'Antimo Vin Santo - 70–100% Trebbiano Toscano and Malvasia Bianca Lunga , individually or together, and a maximum of 30% other grape varieties that are approved for cultivation in the Tuscany region may be used
  • Sant'Antimo Vin Santo Occhio di Pernice - (Occhio di Pernice, dt. "Eye of the guinea fowl") 50–70% Sangiovese , 30–50% Malvasia Nera and a maximum of 30% other grape varieties that are approved for cultivation in the Tuscany region may be used
  • Sant'Antimo Novello ( young wine ) may be called this if new red wines comply with the regulations

The following types must contain at least 85% of the grape variety mentioned. A maximum of 15% other analogue grape varieties that are approved for cultivation in the Tuscany region may be added:

Cultivation

The wines may only be produced in the municipality of Montalcino, with a few exclusions.

In 2016, 9,688 hl of Sant'Antimo DOC wines were produced from 160 hectares of vineyards.

  • Color: golden yellow to intense amber
  • Smell: ethereal, intense, characteristic
  • Taste: harmonious, velvety; for “amabile” (dt. lovely) even more rounded
  • Alcohol content: at least 16.0  % by volume ,
    • of which for “secco” (dt. dry): at least 14.0  % by volume , with a remainder of at least 2.0% potential alcohol content
    • of which for amabile: at least 13.0  % by volume , with a remainder of at least 3.0% potential alcohol content
  • Acidity : at least 4.5 g / l (for "dry" and 5.0 g / l for "amabile")
  • Dry extract: at least 21.0 g / l

Sant'Antimo Vin Santo Occhio di Pernice and Sant'Antimo Vin Santo Occhio di Pernice riserva

  • Color: from pale pink to dark pink
  • Smell: warm, intense
  • Taste: sweet, soft, velvety, round
  • Alcohol content: at least 16.0  % by volume , with a remainder of at least 2.0% potential alcohol content
  • Acidity : at least 4.0 g / l
  • Dry extract: at least 26.0 g / l
