The overview of baking competitions in Germany is a compilation of the public quality comparisons of various freshly baked products such as bread and rolls , cakes and tarts, including stollen . These are fresh baked goods from amateurs ("hobby bakers") as well as from professional bakers and confectioners ("professionals") who face the judgment of consumers or a jury at a specified time and in a suitable place.

Not included in this list are the regular quality and hygiene controls such as the bread tests carried out in an institute since 1958, recipe competitions such as those advertised by magazines, comparisons of long-life baked goods , private baking competitions, comparisons advertised by individual companies or events that take place on the Internet such as for example a cupcakes competition .

The baking events compiled below do not claim to be complete.

Bread and roll competitions

Federal territory as a whole

There are official German bakery championships , but only professionals or trainees compete. The venue is the Bakery Academy in Weinheim .

Baden-Württemberg

Every year there is the Heiligkreuztaler Bread Festival in Baden-Württemberg :
The company K.-H. Häussler GmbH in Altheim-Heiligkreuztal invites you to a public bread festival, where bread-baking equipment is presented and live demonstrations take place.

Berlin

In Berlin, the Bread Festival has been taking place under the television tower on Alexanderplatz since 1996 , which is organized by the bakers' guild together with the Evangelical Church. Above all, it appeals to the creativity of the Berlin craft bakers, who are given a current motto. After evaluation by a panel of experts , the smell, taste, shape, appearance, surface and crustal properties easing, crumb, texture and elasticity according to predetermined DLG - criteria must assess a "bread of the Year" is determined.

Details of some previous events

  • 1999: 40 Berlin bakeries chose a bread from 25 recipes that had been compiled from all over Europe, which they baked; For example, a ring-shaped flatbread (Finland), a Vörtbröd (Norway), a cross-shaped Allgäu shield (Bavaria), a Vinschgauer loaf (Northern Italy), the Banat bread (Romania), a Puszta bread (Hungary), the sweet tartaruge (Yugoslavia) or the Mravenec (Czech Republic).   • 2000: The winning bread was called "Raisin Bomber".
  • 2001: Here, a Malfabrot was very popular with customers, which was offered by master baker Stefan Kädtler for the competition. As a result of this result, the craft business also came up with offers of "kosher baked goods", which it has been selling regularly to interested parties, especially Jews, since then.
  • 2004: "Pacemaker - The Athlete's Bread" was presented to an interested audience. This is a wholemeal bread with either nuts or fruits
  • 2005: Around 20,000 visitors came to the tenth Berlin Bread Festival, at which 30 bakeries from all districts offered their products. For the first time, the “Golden Brezel”, the new seal of quality from the Berlin Bakers' Guild, was awarded to a total of 21 businesses. There are strict criteria behind it, which are regularly checked, including the training of apprentices, manual production of the products, trained and competent sales staff as well as regular participation of the owners in further training measures. A special attraction was "Germany's largest pretzel", produced by the Mayer bakery from sweet dough with cinnamon and raisins measuring 3.60 meters x 1.60 meters and weighing 90 kilograms.
  • 2007: 17 bakeries presented 45 bread creations, including the Marzahner Mühlenbrot or the Spandauer Festungsbrot; The motto of the festival was "Europe is (s) t 50".
  • 2008: 16 bakeries took part.
  • 2009: 150 breads were presented at the festival.
  • 2010: This year, the newly created "Bärlino-Brötchen" was presented to the public, which is said to contain a particularly large number of healthy ingredients and has since been sold in some Berlin bakery shops. The motto of the bread festival was "family fun all about bread".
  • 2014: The jury chose Flotte Lotte Dinkel-Whole-Grain BreadPlus as Bread of the Year .

Hamburg

In the Hamburg area , you are regularly looking for the best Franzbrot , a yeast Danish pastry baked with sugar and cinnamon. The baking competitions take place between the Hamburg bakeries and the assessment is made by the visitors or buyers.

North Rhine-Westphalia

In Bad Berleburg , on the occasion of the restart of some historical bakeries, the “bread market” was organized, which has been held every year since then with the harvest festival in October and attracts numerous visitors.

Rhineland-Palatinate

From Landau in the Palatinate , reports have been made about the "bread market" held there annually since 2007 in a hall. The Palatinate-Rheinhessen Bakers' Guild presents its delicacies to try, from which a jury selects the best breads, which are then publicly awarded.

Saxony

In September 2006, in preparation for a harvest festival, the State Church Community of Chemnitz invited children and young people (“Teenie Circle”) to publicly bake bread. The search was for the most creative bread that the 20 participants produced under the eyes of the visitors. The result was assessed on the following day by the participants of the festival. The first-placed bread was “Igel mit Maus”, a bread with spikes and an apple on its back and a matching bread roll in the shape of a mouse.

Cake and cake competitions

Area South-West Germany (Baden)

Since 2001, based on a preselected recipe, a public baking competition has only been held with amateur bakers. The SWR invites ten final participants to bake their recipes in front of the cameras in the Gaggenau Academy of Delicacies . Here, too, a jury of baking professionals and editors evaluates the creativity of the recipe, the ingredients, the precise work, the presentation and of course the taste. This creates totally different cakes with imaginative names; In 2005, the “Poppy seed amaretti cheesecake with balsamic cherries”, “Layer cake with various lemon flavors” and “Die Monde des Kaliph” (the three winners). The three best cake bakers then had to make their cakes for around 200,000 TV viewers of the program “Coffee or Tea?” On June 24, 2005 live on the show and explain the most important steps of the recipe.

Bavaria

Cheesecake Competition

In the foothills of the Alps in Bavaria , a (first) cheesecake competition took place in 2011 , initiated by rural women from the Miesbach district. The Bavarian Farmers' Association (BBV) was responsible for the organization and orientation . In regional preliminary rounds, finalists from twelve districts were determined based on the recipes submitted and invited to a joint final competition in the House of Bavarian Agriculture in Herrsching am Ammersee . The jury's task is to select the “milk spring cheesecake” from particularly imaginative creations. The testers are both baking professionals and private individuals, even the Bundestag member Marlene Mortler was there in 2011. The products are not divided into categories, but an overall evaluation is carried out according to appearance, consistency and taste.

Pies

A large cake show by the confectioners' guild is also reported from the city of Augsburg , which takes place in the Hotel Steigenberger "Drei Mohren". The event has probably been around for a long time, because ready-made cakes can be seen that mention the year 2008.

Berlin / Brandenburg

Cheesecake Competition

The federal states of Berlin and Brandenburg have been holding a cheesecake competition (also called cheese cake competition ) since 2007, with lively and growing participation. Event locations are mostly busy shopping centers. While there were initially 22 quark cakes submitted for evaluation , known in this country as cheesecake , in 2010 55 products made it into the final of the competition. A substantial increase took place again through the equal participation of hobby bakers. In March 2012, 74 creations were eliminated. The organizers, under the umbrella of the Confectioners' Guild Berlin , had defined categories from the second competition onwards in order to enable better comparability. These are high-baked cheese tarts (category 1), cheesecakes with fruit filling (category 2 ), cheese tarts without fruit filling (category 3), egg pancake / Dresden egg pancake (category 4) and hobby bakers (category 5, all of the above types permitted). Each participant can only take part once in a category, which means that bakery chains and individual participants are treated equally. The neutrality of the jury is guaranteed by the fact that the cakes are numbered and no origin is indicated. The final and the award ceremony are public. The winner of the highest category can call himself “Cheesecake King” for a year, and the first, second and third place winners in all categories receive a beautifully designed certificate.

After the event has ended, the remaining pieces of cake will be sold and the entire proceeds will be donated to a charitable cause. In March 2012, around 1000 euros were raised for the Berlin children's and youth meeting point FIPP e. V. in the Kluckstrasse were donated.

The audience interest was great from the start; the number of visitors in 2012 is estimated at well over 1,000. (They are not counted directly and entry is free.)

Hamburg

Pies

In October 2009 Katja Kruse from Hamburg organized the first German cake fair in the Mövenpick Hotel Hamburg . Hobby pastry chefs faced the judgment of pastry chefs and visitors under the title “The Cake Show”. Motif cakes with imaginative names were sought for various occasions in everyday life. Due to the growing success, the cake show took place in 2010 in the Curio-Haus Hamburg and from 2011 to 2014 in the Hamburg Chamber of Crafts. In 2015 and 2016 the cake show was canceled and since 2017 it has been taking place every spring under the title “Hamburg Cake Fair” in the Hamburg-Schnelsen exhibition hall.

For a better comparison, the organizers have specified categories; from 2009 to 2011:

  • A: decorated festival cake;
  • B: decorated celebratory cake with wired fondant flowers;
  • C: Freestyle,
  • D: figure,
  • E: wedding cake with two floors or more,
  • Q: sugar flowers,
  • G: Decorative element.

The categories were changed for the first time in 2012:

  • B was now "Christmas Cake",
  • D figure / decorative element,
  • F sugar floristry and
  • G cupcakes.

In 2013 the following categories applied:

  • A: a given topic;
  • B: Freestyle,
  • C: figure / decorative element,
  • D: wedding cake in two or more floors,
  • E: sugar flowers,
  • Q: cupcakes,
  • G:  countries in the world ,
  • H: Children's competition with changing topics.

The specification for category A in 2014 was “famous films”, for category stacked sculpture cake - multi-tier freestyle cake, category H: “the four seasons”; I Children's fairytale competition .

Hesse

In 2008, a first cake baking comparison was organized in the Frankfurt district of Bergen-Enkheim by the Vereinsring and the Mothers and Family Center (MATZ). The campaign is public and supports families in need. There are no specifications for the type of cake, but the recipes must be published. After the assessment by a seven-member jury of bakers / confectioners (appearance, taste and creativity), the cakes submitted by private individuals are sold and the entire proceeds are donated to a charitable cause. The number of participants has increased since the first competition (47 cakes were to be examined in 2010) and the proceeds were around 1000 euros, each of which was given to a needy family. The best 15 participants did not go away empty-handed, but received vouchers from local restaurants and businesses.

Stollen competitions

Another special pastry for which separate comparisons are made is the Christmas cake .

Baden-Württemberg and Lower Saxony

The “Zacharias Stollen Champions Award” , a prize for the best home-baked Christmas stollen, has existed since 1991 .

Berlin

A quality competition “Berlin's best Stolle” wanted (in Berlin the pastry is called “Stolle”, without “n”) is known, which takes place in public. In addition to a jury, visitors are also entitled to vote. In November 2011, the cranberrystollen from the Wolfgang Zimmermann bakery & confectionery from Berlin-Staaken won the “Blue Stollen Seal” from 71 submitted Christmas cakes. In 2010 it was a poppy seed cake from the Sommerwerk bakery in Berlin-Köpenick .

North Rhine-Westphalia

In 2008, the master bakers of the city of Recklinghausen organized a “Christmas stollen baking competition for everyone”.

Saxony, Saxony-Anhalt and Thuringia

  • The Sächsische Zeitung has been calling for a nationwide tunnel competition since 1993. Readers can tell the editorial staff about their favorite pastries. The bakery with the most votes is named "Stollen King" and honored with a certificate. Traditionally, many bakeries from Dresden are shortlisted here, since they have been making Christmas cookies for several generations.
  • On the market square in Zwönitz , stollen baked by professionals are presented to interested visitors to vote in order to determine a “Stollen King”.
