The city experienced its first growth spurt from a gold rush that started in nearby Lumpkin County . In 1851 a city fire destroyed large parts of Gainesville. On May 28, 1871, the city was connected to the railway network, which meant a further enormous development spurt. Between 1870 and 1900 the population grew from 1,000 to 5,000. On December 19, 1902, Gainesville became the first town south of Baltimore to receive electric street lights. On January 1, 1903, 106 people died and around 300 were injured in a storm. In 1943 the United States Navy took over an area from the city of Gainesville to build a military airfield. The airfield was returned to the city for civilian use in 1947 and renamed Lee Gilmer Memorial Airport in 1971 .

In the post-war period, poultry production became an important economic factor in Gainesville. Today the city is therefore also called the Poultry Capital of the World . Six of the ten most important companies are now part of the poultry industry. In 1961, the city government passed a law prohibiting the consumption of chicken with a fork.
