Salice Salentino DOC is a name for various Italian white , rosé , red and sparkling wines from the southern Italian provinces of Lecce and Brindisi , Apulia . The wines have had a "controlled designation of origin " ( Denominazione di origine controllata - DOC) since 1976 , which was last updated on March 7, 2014.

  • Salice Salentino Rosso and Salice Salentino Rosato : The wines must consist of at least 75% Negroamaro grapes . A maximum of 25% other red grape varieties that are approved for cultivation in the Puglia region may be added.

Red wine (Salice Salentino Rosso)

The wine is aged in tanks for at least eight months. However, quality providers allow the wine to mature in different containers for three to four years. If the wine has been stored for at least two years, it can be labeled Riserva . In contrast to the Spanish Reserva , the Italian Riserva does not specify where the wine must mature. So steel tanks, wooden barrels or just bottles can be used. However, high-quality Salice Salentino Riserva are usually matured in wooden barrels and, depending on the quality level, can be stored for five to ten years or more with the buyer.

  • Color: more or less ruby ​​red - tends to garnet red with increasing maturity
