For the 2013/14 season he moved to the Foreurs de Val-d'Or in the Ligue de hockey junior majeur du Québec (LHJMQ), the highest-ranking junior league in his home province. Previously, the Foreurs had selected him in the league's Entry Draft 2013 in sixth position. Even as a rookie , the winger and the team won the LHJMQ playoffs for the Coupe du Président , before he significantly increased his personal statistics to 73 points from 68 games the following year . These points section of more than 1.0 per game, he also confirmed in the season 2015/16, so it the Carolina Hurricanes in the NHL Entry Draft in 2016 into account at 21 position. The Canadian then returned to the LHJMQ for another year, ceding to the Saint John Sea Dogs in January 2017 . With this he won his second Coupe du Président at the end of the season, but missed the final in the subsequent Memorial Cup 2017 - as well as 2014 -.
In the 2017/18 season, Gauthier finally switched to the organization of the Carolina Hurricanes, which had already provided him with an entry-level contract in July 2016 . For the time being, however, he was used in their farm team , the Charlotte Checkers from the American Hockey League (AHL). There, too, the attacker established himself as a regular scorer, while he won the Calder Cup with the Checkers in the AHL playoffs 2019 . In October 2019 he finally made his debut for the Hurricanes in the National Hockey League (NHL), but was still mostly used in the Checkers. In February 2020, Gauthier was given to the New York Rangers in exchange for Joey Keane .

Gauthier gained his first international experience at the World U-17 Hockey Challenge 2014 in January , where he finished fourth with the Canada Québec team . With the Canadian U20 national team , a disappointing sixth place followed at the U20 World Cup in 2016 , before losing to the United States in the final the following year and thus winning the silver medal.
