Recioto della Valpolicella
Under the name Recioto della Valpolicella , Italian wines with a sweetish character are produced from the Valpolicella wine growing area in the province of Verona . Since 2010, they have had a “controlled and guaranteed designation of origin ” ( Denominazione di Origine Controllata e Garantita - DOCG), which was last updated on March 7, 2014.
Growing area
The cultivation of the grapes for the Recioto della Valpolicella is only permitted in the municipal areas (in whole or in part) of the following municipalities: Marano di Valpolicella , Fumane , Negrar , S. Ambrogio , San Pietro in Cariano , Dolcè , Verona , San Martino Buon Albergo , Lavagno , Mezzane , Tregnago , Illasi , Colognola ai Colli , Cazzano di Tramigna , Grezzana , Pescantina , Cerro Veronese , San Mauro di Saline and Montecchia di Crosara .
Manufacturing
Wines according to the DOCG appellation can be: “Recioto della Valpolicella” also with the names “Classico” and “Valpantena”. A “Recioto della Valpolicella Spumante” is also produced, which can also be called “Valpantena”. The wine is made from grapes that are stored on special drying devices for at least 120 days (see straw wine ) and only then processed. This increases the percentage of sugar sharply. The must is not fully fermented and so the non-fermented sugar ensures a lovely, round taste.
Approved grape varieties are:
- 45-95% Corvina . This variety can be replaced by Corvinone Veronese up to a maximum of 50% .
- 5-30% rondinella
- 0–15% other red grape varieties approved for cultivation in the province of Verona, of which 0–10% are individual grape varieties
- 0–10% other, autochthonous red grape varieties that are permitted for cultivation in the province of Verona.

- Alcohol content : at least 12.0% vol., With a remainder of at least 2.8% potential alcohol content
- Acidity : at least 5.0 g / l
