Bianco di Custoza
Bianco di Custoza or simply Custoza is a dry Italian white wine from various municipalities in the province of Verona , Veneto , which has had the status of a "Controlled Designation of Origin " ( Denominazione di origine controllata - DOC) since 1971 , last updated on March 7, 2014.
Cultivation
The white wine may be grown in whole or in part in the municipalities of Sommacampagna , Villafranca di Verona , Valeggio sul Mincio , Peschiera del Garda , Lazise , Castelnuovo del Garda , Pastrengo , Bussolengo and Sona .

In 2014, 111,685 hectoliters of white wine were produced on 1,345 hectares of vineyards . According to the DOC denomination, the following wines are produced:
- White wines: "Bianco di Custoza" and "Bianco di Custoza Superiore"
- Sweet wine : "Bianco di Custoza Passito "
- Sparkling wine : "Bianco di Custoza Spumante "
The wines may only be made from the following grape varieties:
- 10-45% Trebbiano Toscano
- 20-40% Garganega
- 5-30% Tocai Friulano , which will also Trebbianello called
- 0-30% Bianca Fernanda (= Cortese)
- 0-30% Malvasia , Riesling , Pinot bianco , Chardonnay and / or Manzoni Bianco (individually or together)
Wines with the designation "Bianco di Custoza Superiore" must be stored for at least five months from November 1st after the harvest before they can be sold.

- Dry extract : min. 20.0 g / l
- Residual sugar : maximum 7 g / l
Bianco di Custoza Spumante
- Perlage : fine and persistent
- Color : more or less intense straw yellow, with occasional golden yellow reflections
- Smell : fragrant with a hint of fruit, slightly aromatic (with the Martinotti method - tank fermentation), fine and complex, characteristic (with bottle fermentation)
- Taste : from "brut" to "dry"
- Alcohol content : at least 11.5% vol.
- Acid content : min 5 g / l
- Dry extract : min. 15 g / l
