Recioto di Soave

Recioto di Soave is the name for a white sweet wine from the northern Italian wine-growing region Soave in the Veneto region . The name “Recioto” is derived from the dialect expression “recia” = “ear” and refers to the top, outermost berries of a grape. Due to their position, these berries receive a lot of light and sun and are therefore riper and sweeter than the rest of the berries. The wine has had a "controlled and guaranteed designation of origin " ( Denominazione di Origine Controllata e Garantita - DOCG) since 1998 , which was last updated on March 7, 2014.

Growing area

According to the DOCG denomination, the wine is only allowed (in whole or in part) in the municipalities of Soave, Monteforte d'Alpone , San Martino Buon Albergo , Mezzane di Sotto , Roncà , Montecchia di Crosara , San Giovanni Ilarione , Cazzano di Tramigna , Colognola ai Colli , Caldiero , Illasi and Lavagno in the province of Verona .

The wine is made according to an ancient tradition. Only selected grapes , previously only individual berries , are dried in a special process on racks or straw mats. This procedure is also called "appassimento". It naturally concentrates the sugar content and a noble rot caused by gray mold rot ( Botrytis cinerea ) often develops . See also straw wine .

A sparkling wine called “Recioto di Soave Spumante ” is also produced.

The following grape varieties are permitted in the rules of the Recioto di Soave designation of origin :

  • 70-100% Garganega
  • 0-30% Trebbiano di Soave
  • in the range of 0–30%, other white grape varieties that are approved for cultivation in the province of Verona may also be used, up to a maximum of 5% each.

  • Residual sugar : at least 70 g / l
