Ellsworth was organized as a town on February 26, 1800. Previously, the area was mapped as Plantation Number 7. The town was named after Oliver Ellsworth , one of the authors of the United States' Declaration of Independence and the third President of the US Supreme Court. The town's area expanded in 1809 and 1852 when it added areas of Dedham, Surry and Trenton.

Ellsworth became a City on February 27, 1869.
