- A specialty here is a pyramid-shaped soft cheese made from raw or pasteurized goat's milk, covered with rind ash and with mold on the outside, with the top of the pyramid cut off. It is made by hand in small farms. There is a legend about the shape of the cheese: It is said that Valençay used to be in the shape of a complete pyramid. But when Napoleon , coming from Egypt after his devastating defeat, stopped at Valençay Castle and saw the cheese that reminded him of the Egyptian pyramids, he drew his sword and chopped off the tip.
