concept
The aim of the program is to determine the best chef through an elimination competition. This one can win a prize. In the first season, the finalists also received a voucher for kitchen appliances worth 10,000 euros and the winners a car. Both professional and hobby cooks appear as participants. Product placement takes place on the show ; the first season was fully recorded before the first episode aired.
At the beginning, each candidate is given an hour to cook a dish of their choice. The dish may only be served on tasting spoons . The judges are served the dish without knowing who the chef is. Then they decide whether the respective candidate was so good that they should join their team for the further course of the program. If the candidate has convinced several jurors, he can decide whose team he would like to join. Up to and including the fourth season there were four chefs in each team, since season 5 there have been five.
In the further course of the program, the candidates are coached by their mentor and have to choose to cook dishes on predetermined topics, sometimes under the supervision of the mentor, sometimes without them. After each cooking round, either the jurors or guest jurors decide again in a blind tasting who was the worst cook. This must be eliminated, whereby there is still a relegation chance through elimination boiling between the cooks of the worst rated dishes of a sequence. Through the blind tasting, it is possible for a juror to speak out against a chef from his own team.
Sequence of events
The first and last episodes of a season are different.
Regular sequence
First, the moderator introduces a guest juror who will evaluate the results of the first cooking session. Then the culinary topic of the episode is named and since season 2 the coaches have to blindly choose from four subdivisions of the actual topic, according to which their dish must then be based.
In the first cooking session, the candidates cook a dish under the supervision of their coach, which they have 60 minutes to prepare. Immediately before this preparation time, you will have the opportunity to talk to the team for five minutes and plan your tasting spoons. Since only one of all the spoons prepared in the team can be sent to the guest judge for evaluation, the team discusses in the last minutes of the cooking time which candidate will prepare his spoon for the judge. The coach has the last word. The guest juror does not know which team is presenting which tasting spoon, but sees the topic to be implemented. He judges the four spoons as “best spoon” and “worst spoon”. The team that has cooked the best spoon receives the guest jurors as support in the second round. In addition, the cook of this spoon is immune - so cannot be eliminated in the course of the further program and will definitely take part in the next episode. The team which, in the opinion of the guest judge, prepared the worst spoon immediately loses a team member. The team coach alone decides which candidate has to leave the show. This is not necessarily the candidate who cooked the worst-rated dish. Since the 7th season, a coach from another team has been allowed to steal an outgoing candidate into his team at this point, provided that he has not yet taken this option in the season after a previous team or decision-making boil.
Before the second cooking round, the guest judge gives three “secret ingredients”, at least one of which must be used in the next dish of the candidate's choice. For the second phase, the candidates are given another hour of cooking time and the coaches withdraw because they are supposed to evaluate the dishes of the second round without the cook's knowledge. After trying all the spoons, each juror awards a gold star ("best spoon") and a red star ("worst spoon"). Candidates whose spoons were not rated in this way by the judges will automatically advance. Chefs who have received a star can only progress safely if they have not received a red star. All candidates who have received a red star must still participate in a decision cooking in the same sequence. This also applies if the person has received gold stars anyway.
In the decision-making process, the candidates are given a culinary topic and have to implement it without the support of the coaches. Only their teammates are allowed to cheer and advise them from a grandstand above the cooking area. After the third cooking session, the four coaches assess the results blindly again as in the second session and only award one gold star (“best spoon”). Only the candidate whose court receives this rating most often will participate in the next episode. Since season 2, every candidate can advance in the decision-making process if they receive at least one gold star. In theory, all participants in the decision-making process have the opportunity to start again in the next episode. Since the 5th season, the coaches have been able to provide advice during the decision-making process (only 30–45 instead of 60 minutes). The guest juror then decides on the candidates' progress. Here, too, since the 7th season, another coach has been allowed to steal an outgoing candidate from his team, provided that he has not already taken this option after a team cooking or decision cooking in this season.
If a team loses its last team member due to the departure of a chef from the show before the finals, the team is deemed to be dissolved. The team coach continues to participate in all assessments. If candidates have to leave the show for health reasons, other chefs who may have previously retired will move up and thus receive a second chance.
final
For the first cooking round of the final, a guest judge gives the remaining four candidates three ingredients, of which at least one must be used. The opponents have one hour to cook, they are advised by the coaches while cooking. The guest judge evaluates the four prepared dishes, the chef of what he considers to be the worst dish is eliminated.
For the second cooking run of the final episode, the candidates in the first season were presented with four wines by another guest juror, with which they, with the advice of their coaches, should cook a corresponding dish. The guest judge of the second final round also lets the cook out of what he considers to be the worst dish.
In the final round of season 1, the two remaining cooks were asked to prepare a three-course menu within 90 minutes , again only served on tasting spoons, without the assistance of the coaches . The coaches choose what they think is the best menu, as explained on the show, without knowing who cooked the respective menu. The candidate who got the most good ratings won the show and won a prize of € 100,000.
In the final round of the second season, the two remaining cooks, unaccompanied by the coaches, but accompanied by a candidate who had already left, were asked to prepare any dish on 44 spoons within 90 minutes (40 spoons for the audience, 4 for the jury). The candidate who received the most good ratings had won the show and won a prize of € 50,000 and a cookbook with the winner's cover, which was available in all bookshops from the day after the final.
In the final round of season 3, the two remaining cooks were supposed to prepare a three-course menu within 90 minutes without the assistance of the coaches, again only served on tasting spoons. Before the program was broadcast, the coaches were asked about their favorite ingredients. The two remaining candidates were allowed to choose a face-down card that contained a combination of the ingredients of a coach. The candidate who got the most good reviews won the show and won a prize of € 50,000 and a cookbook with the picture of the winner on the cover, which appeared the day after the final.

criticism
Jürgen Dollase criticized in the FAZ that, since the applicants were not recruited from the circles of recognized top chefs, not the best chef, but "probably only the best chef of the rest" was determined. Focussing the way of serving on a test spoon is overwhelming for both candidates and the jury anyway, because not every dish can be served sensibly on just one spoon. The candidate preselection (10,000 people applied for the first season) was apparently based on dramaturgical considerations. In general, the cooking programs on television would allow the philistine bourgeoisie to grow up; the program The Taste is so far removed from cooking that “cooking could also be replaced by masonry work or flower care”.
The journalist Klaus Dahlbeck criticized in his food blog that candidates who had already left could intervene through a back door, but fundamentally contradicted Dollase's assessment that he judged an entertainment TV program according to the standards of gastronomy criticism, which in view of the fact that odorous and taste television has not yet been invented, the program The Taste does not do justice.
Awards
The Taste was nominated for the German Television Award in 2018 .
In the category of best creative performance Entertainment (director, writer, editor) were Ralf fireplace (Head editor) and Christian Bender nominated (average producer) for the best cut.
Other nominees in this category were Micky Beisenherz , Jens Oliver Haas and Jörg Uebber (book), as well as Mark Achterberg (director). The latter won the prize for directing Let's Dance and Germany's Next Top Model - Das Finale .
