Matthias Jacob (born April 2, 1960 in Tambach-Dietharz ) is a former German biathlete .

Jacob, who started for ASK Vorwärts Oberhof , was one of the top ranks in the GDR's biathlon team in the 1980s . At the 1984 Winter Olympics in Sarajevo , he won the bronze medal in the sprint competition. He took part in six biathlon world championships and was able to win at least one medal in each. He was three times world champion with the relay (1981, 1982 and 1987), once vice world champion in the sprint (1987) and three times vice world champion with the relay (1983, 1985 and 1986). He was also successful at World Cups and a number of national championships.

In 1986 he was awarded the Patriotic Order of Merit in silver for his sporting success .

Together with his wife Carola Jacob (as Carola Anding, she became a cross-country Olympic champion in the 4 × 5 km relay in 1980), he runs a practice for sports physiotherapy in his home town of Floh-Seligenthal . He works as a supervisor and physiotherapist for the German cross-country skiing team.

For the state security of the GDR he worked under the code name "IM Martin Müller" as an unofficial employee .
