The castle was probably built in the 12th century by the Lords of Hirschberg . In 1278 a Rüdiger von Dietenhofen was named as administrator of Sandsee Castle. Count Gebhard von Hirschberg sold the castle to the Hochstift Eichstätt in 1302 . The complex served the Eichstätter (prince) bishops as an official and hunting palace.

The castle was destroyed in 1462 during the war between Duke Ludwig of Bavaria and Margrave Achilles von Ansbach . Bishop Wilhelm von Reichenau had the damage caused by the Margrave War repaired in 1467, as evidenced by a coat of arms on the west wing. Bishop Martin von Schaumburg had repairs carried out on the old palace in 1572 . The Wehrerker was added in 1621. During the Thirty Years War (1618 to 1648) parts of the castle were burned down in 1632 and 1636 respectively.

Around 1660 the castle was rebuilt under Prince-Bishop Marquard Schenk von Castell . The roof of the keep had to be replaced after a lightning strike in 1782. Due to the secularization , the castle fell to Bavaria in 1815 and in the same year the Bavarian King Max I Joseph gave the castle together with the Ellingen throne to his general Carl Philipp Prince von Wrede in appreciation of his services . A palace chapel was built into the lower floors of the west wing in 1902 and was consecrated on July 18, 1903. From 1941, Sandsee Castle was used as a storage depot for the Nuremberg State Archives . From 1950 to 1955 it was a diocesan youth center of the Eichstätt diocese .

Before the municipal reform, a district of Mischelbach, Sandsee was incorporated into Pleinfeld on July 1, 1972 together with its main town.
