Viticulture
The Morey-Saint-Denis wine-growing region ( Appellation d'Origine Contrôlée since December 8, 1936 ) has 20 Premier Cru (total area 44 hectares ) and 5 Grand Cru locations. Mainly red wines made from the Pinot Noir grape variety are grown . The yield of red wine for the normal local appellation is limited to 40 hectoliters / hectare. Exceptions allow the yield to be increased by max. 20% higher. The average harvest is around 4000 hl / year of red wine (the area of the Grand Cru is excluded from this amount).
In addition, around 205 hl of white wine are produced annually from the approved grape varieties Pinot Blanc ( Pinot Blanc ) and Chardonnay . The minimum alcohol content is 10.5 ° for the red wine and 11 ° for the white wine. In the case of artificial enrichment with dry sugar ( chaptalization ), a maximum alcohol content is set, which is 13.5 ° for red wine and 14 ° for white wine.
