Cheese making
The place is best known for its cheese production, attested as early as the 11th century, and as the place of origin of the noble mold Roquefort . The basis for this are several caves, which are ventilated through faults in such a way that an optimal ripening climate for the cheese is created. The townscape is characterized by the numerous cheese factories, most of which can also be visited.
