Rosins Restaurants , formerly completely Rosins Restaurants - A star chef has been cleaning up , since the Corona crisis Rosins Restaurants - Now a documentary soap based on a film script by the television station Kabel eins is even more so . Overview and introduction
First, Rosin gets an overview of the restaurant and has the situation described from the owner's point of view. He then confronts them with the announcement that “test eaters” would be visiting the restaurant in a few hours, with numbers that the restaurant has often not served for a long time. The test eaters are selected by an agency in the region or addressed directly by Frank Rosin for the program. The operators of the restaurant are supposed to prepare a three-course menu for the test eaters , while Rosin watches the owners and employees at work. Rosin also tries the food and comments on it.
The first evaluation
The test eaters then rate the restaurant according to five categories: menu selection, taste, price / performance, ambience and service. In the first few seasons it was starter, main course, dessert, ambience and service. In the first season there was also the category “drinks”. In the case of mixed businesses with affiliated hotels or guest houses, separate tests are carried out with their own categories for the overnight stay. Up to ten points can be awarded in each category, so that the test meal can be rated with a maximum of 50 points. The result of the first test meal is often negatively falsified by the lack of preparation by a company, since the company reduced its cost of goods and thus its inventories a long time before the shipment due to a lack of demand or debt. Before Rosin informs the owners of the rating, he asks them to give a self-assessment. The evaluation is the basis for Rosin, at which points he sees a need for optimization.

Over the next few days he will work on the defects with the restaurant team. There can be deficits in the preparation of the food, the cleanliness and order, the outdated or unsuitable furnishings and in the cooperation between boss and employees. If the calculation is inadequate, he advises restaurateurs to add between three and four times the starting price, depending on the episode. Despite the fact that Rosin often acknowledges that innkeepers are often not educated or trained entrepreneurs, Rosin never educates innkeepers about the risk of such business decisions. But most of the businesses that Rosin visits are often already struggling with high debts. Measures include a new culinary line with a reduced menu, a renovation or limited conversion of the kitchen or dining room, a renaming and clarifying discussions between the company and customers or owners of the catalog that is usual in most programs. The assumption of debts and liabilities, with extremely rare exceptions such as low-three-digit miner's contributions , is expressly not part of the program's measures, since Frank Rosin sees the program as “ helping people to help themselves ”. If extensive renovation work is necessary on the business premises, Rosin leaves the restaurant for a few days and hands over the pending work to his construction manager Matthias “Willi” Wilke or, later, to interior designer Flo Kogler, who, together with Rosin's team and volunteers, is temporarily responsible performs. The result is never presented without the usual use of image filters for television and especially in the "after" recording without the headlights of the film team.
Second test meal and graduation
After completing all activities, there will be another test dinner and an evaluation in the same categories. The success of his visit is derived from the comparison “before - after”. After the broadcast
In order to present the sustainability of the success of Frank Rosin's measures, selected companies are visited a few months after production by reporters from the program “K1 Magazin” from Kabel Eins. The episode, which first aired on January 31, 2013, deals with two restaurants for the first time because the operator of a restaurant refused Rosin's help and therefore no improvement in the situation was possible. Instead, Rosin devoted himself in detail to the second restaurant. In the episode, which was first broadcast on June 18, 2013, two restaurants are also an issue because the operators of the restaurant presented first had to give up for financial reasons. The Alpengasthof was the first hotel that Rosin helped. In addition to the usual test eaters, he also used test sleepers. On August 6, 2013, Rosin dealt with a hotel for the second time. This hotel was converted to bed and breakfast during filming because the owners had to give up the restaurant that went with it (for the time being).
The tone of the program has changed as a result of the Corona crisis . As of July 30, 2020, Frank Rosin will help restaurateurs to adapt to the gastronomic and economic changes caused by the crisis. The changed production conditions can be clearly seen in the broadcast. Market share
The show started in November 2009 with an initially below-average audience rate of 5.1%, but over time it was able to level off to the station's average market share of 6.1%. Production conditions and criticism
The owner of the first restaurant from the first season told the press that he had been contacted by the production company. In the program, however, it was presented as if his waitress had called the star chef for help. The owner of the linden tree reported something similar to the Weserkurier. According to Frank Rosin on the occasion of the shooting in the Amtslinde, the restaurants would be subjected to a kind of casting before shooting .
According to an article in the FAZ from 2010 , the restaurateurs involved must agree to a contractual penalty for the production company in the event of an infringement, not to disclose the circumstances of the shoot to third parties and no other for up to six months after the broadcast To give media interviews about the production. In addition, the restaurateurs who sign the contract undertake to be available for “at least” ten hours a day for filming. A termination of the shooting by the restaurateurs is contractually excluded. Furthermore, a party service often delivers dishes for the second test dinner, which are picked up the next day. As one of the cases became known, the filming of a program can take several weeks. The production department also has a budget to finance the structural measures taken on the occasion of the broadcast.
In 2014 there was further criticism from the restaurateurs family of Nico's Astra Pott , who had participated in the show. According to the operator, the TV team “pulled off their show and made us look like idiots”. There would actually have been “stage directions as to who had to say what when”. For example, Rosin was surprised by an upcoming wedding in front of the camera, although the production company had been in contact with the production company for eight months and this was pointed out. Construction manager Matthias “Willi” Wilke did not renew his contract with the production company for 2018 in order to look for new professional challenges after a certain routine in the renovation of restaurants.

Raisins canteens
Since November 10, 2015, Kabel eins has been showing the offshoot of Rosins Kantinen - A star chef undercover . Frank Rosin helps canteen operators . He is supported by Olaf Hertlein, an expert in large catering, and the interior designer responsible for new facilities, Melanie Frehse. At the beginning of his assignment, Rosin takes a look at the day-to-day operations in the canteen undercover . After he has made himself known, he analyzes the problems and helps to establish successful structures. The guests rate the work before and after the changes with simple emoticons in an app .
