The Bourgogne Passetoutgrain wine-growing region is the regional appellation of the Burgundy wine-growing region . Another spelling is Bourgogne passe-tout-grains . Regional means that every wine from the Greater Burgundy region can bear this name, provided that the minimum requirements are met. Since July 31, 1937, these provisions have been recorded as part of an Appellation d'Origine Contrôlée (AOC for short). Only red and rosé wines fall under the provisions. The simple and fresh red wine should be stored for a maximum of 2–3 years. The drinking temperature should be a cool 13–15 ° C. The Bourgogne Passetoutgrain is one of the rare Burgundy wines that is not made from a single variety, but is a blend of Gamay and Pinot Noir. Since there are practically no Gamay vines in the Côte-d'Or department , the expansion of the wine is concentrated in the area of ​​the Côte Chalonnaise in the Saône-et-Loire department .

In 2006, a total of 606.98 hectares were declared under this designation of origin . The production volume between 2003 and 2007 averaged 35,989 hectoliters of wine. These values ​​do not include the production quantities of Bourgogne , whose growing conditions and harvest quantities are described separately. The wine was quite popular in the 1980s and 1990s when the harvest was between 65,000 and 100,000 hectoliters.

Grape varieties

For the red and rosé , the two varieties are Gamay and Pinot Noir ( Pinot Noir ) admitted. The regulations also mention the Pinot Liébault variety , but nowadays it is more of a clone of the Pinot Noir . The harvest restriction is 55 hectoliters / hectare, the minimum alcohol content is 9.5%. The regulation requires that the must for red and rosé wine contains at least 153 grams of sugar per liter (→ must weight ). If a chaptalization is approved in difficult years , the alcohol content of the finished fermented wine must not exceed 12.5% ​​by volume.
